I love Tuna Fish when it is prepared correctly.
One of my favorite and most popular recipes is grilled Tuna Sandwiches.
However, I know on a low carb diet that's not always something I can do because I do not always have low carb bread in the house.
So I came up with an alternative - Low Carb Tuna Patties.
I will share the recipe with you today for both.
First we will do the Tuna Patties Recipe:
1 Can Tuna, rinsed and drained
1 egg; whisked
3 Tbsp. Coconut Flour
2 Tomato Slices; diced
1 Tbsp Mayonnaise
2 Sandwich Pickle Slices; Diced
Juice from 1/2 lemon (about 1-1/2 Tbsp.)
2 slices cheddar cheese
2 Tbsp. Garlic butter
In a bowl crack the egg and whisk it with a fork. Add Tuna, tomato, pickle, mayonnaise, and lemon juice. Mix, then add the coconut flour and mix in as well.
In a frying pan melt 1 Tbsp of garlic butter, make a tuna pattie from 1/2 of the tuna mixture, fry on medium heat in the garlic butter. When flipped top with 1 slice of cheese. Grill the other 1/2 of tuna mixture the same way - adding cheese on top when flipped.
Serve with tarter sauce if desired.
Now for my much more popular Grilled Tuna Patties.
For this I you do use bread, but you will love these if you can find a good low carb bread. I make my own with natural yeast, but when I am out I make the tuna patties above. So here goes:
1 Can tuna, rinsed and drained
2 tomato slices, diced
2 sandwich pickle slices, diced
2 Tbsp mayonniase
1/2 Cup medium cheddar cheese; grated
juice from 1/2 lemon (about 1-1/2 Tbsp.)
2 slices bread
1 Tbsp Garlic butter
Mix the tuna, tomato, pickles, mayonnaise, cheese and lemon juice in a bowl. Butter one slice of bread with garlic butter. Place buttered side down in medium heated frying pan. Top with tuna mixture. Butter the other slice of bread and place, buttered side up on top of tuna mixture. Grill on medium low heat until bread is brown. Flip and grill other side until browned and crispy. Serve.
