Low Carb Lunch at Chipotle

I love, love, love Mexican food, especially burritos stuffed with all sorts of fresh veggies and Guacamole.

Unhappily however, it's hard to eat out in Mexican restaurants because so many food choices include tortillas, which as I am sure you know are NOT an option on a low carb diet.


That's why many times when I just want a burrito and some fresh guacamole one of my first eat out choices is a Burrito Bowl at Chipotle.

The picture above is the burrito bowl I had for lunch at Chipotle today. The lettuce on top covers many of the other ingredients, but this is essentially a burrito without the tortilla, in a bowl.

The first thing they ask you when you order one of these is whether you want white or brown rice. I skip the rice and have them do pinto beans and extra sauteed veggies (onion and green pepper).

You really are missing out if you forgo the veggies, they make this a fabulous meal!

Then you choose your meat, salsa, and you can add corn (which of course I skip - too high in carbs), cheese, sour cream, and for a little higher price guacamole, and lettuce.

Not only is this one delicious low carb meal but Chipotle touts their "responsibly raised meat", "non-gmo" and local vegetables.
