Here's how I do it:
First off, as I am sure you know its the chips that make nachos a no-no for low carbers. So the usual solution to this is just to bypass nachos and go straight to a Taco Salad.
And don't get me wrong, I love taco salad, but I love the crunch of salty tortilla chips and hot melted cheese just as well.
Sigh, so what's a nacho lovin' girl to do?
Well here is a great way to have your chips and eat them too. And this recipe is big enough to feed the entire family!
Cheesey Nachos Low Carb Style;
First I cook about a pound of ground beef over medium high heat in a large skillet
Next I add in a packet of Taco Seasoning.
Then I dump a cup of Salsa into the hamburger and let it warm through.
Sometimes I also add in a can of black beans, drained as well. Or green chiles, drained.
I let all this warm through on medium heat.
Meanwhile, I shred some lettuce and arrange it on plates like a salad.
I also melt a pound of Velveeta cheese in the microwave until it will drizzle over my nachos.
After the meat is heated through I top the lettuce with about 1/2 cup of the meat mixtuer each.
Next I drizzle the melted Velvetta cheese over the top. And to top it off, I crumble 3 tortilla chips on top for the crunch if nachos.
Its just not the same without that crunch!
I always joke that chips are low carb, if you only have two or three. So this is how I get away with having my chips and rating them too.
