Today I wanted a simple low carb snack, so I made these delicious stuffed green peppers.
Here is the recipe:
1 Medium green pepper
1 Cup Mild Cheddar Cheese; Grated
1/3 to 1/2 Cup Mayonnaise of Miraclewhip - whichever you prefer.
Cut the green pepper into quarters and remove the seeds. Mix the grated cheese and mayo in a small bowl.
Start out with a third a cut of mayo and add more until you get it like you want it. !/2 cup is usually too much.
It ends up being just right somewhere between 1/3 to 1/2 cup.
Stuff the cheese/mayo into the green pepper quarters.
Eat and enjoy! These are one of my favorite snacks and they make great appetizers when I have company over too.
They are good chilled as well, so you can store them in the fridge over night.
I have made this with both Miraclewhip and Mayo and it is good with both, so use whatever you prefer.
If you want a more tangy flavor, go with the Miraclewhip.
I considered adding bacon to the cheese stuffing one of these days but I haven't tried that yet. Maybe one of these days I will.
